Soup and Chili Ideas to Warm Up Cold December Nights

Its December and we all know in Wyoming that comes with some pretty cold weather so heres some chili and soup recipes to warm you up.

Chicken White Green Chili

This recipe was given to me by Victoria another writer on the blog. Its a family favorite and sure to not only warm you up but also clear the sinuses.

1 pound of boneless skinless chicken breasts (I cut them into cubes)
1 medium onion chopped
2 tsp of garlic powder
2 cans great northern beans
1 can chicken broth
2 cans chopped green chilis
1 teaspoon dried oregano
1/4 tsp of cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream

1. In a large sauce pan saute the chicken, onion, and garlic powder in oil until chicken is no longer pink.
2. Add beans, broth, chilis, and all seasonings to the pan and bring to a boil.
3. Reduce heat and simmer for 30 min.
4. Remove from heat and stir in the sour cream and the heaving whipping cream.

Yield: 7 servings

(Note for bigger families and leftovers it is advised to double the recipe)


Old Fashioned Chicken Noodle

This is a recipe that comes from my fiancé’s family.


1. chicken stock

2. chicken breast

3. chicken bouillon

4. carrots

5. garlic

6. onion

6. parsley

7. flour

8. water

9. salt

Note- the amount of ingredients will vary with the amount of soup that you want to make and the flavors you want.


Cut and brown the chicken. while it is browning add the stock and the bouillon together along with the other spices. Once the chicken is cooked add it to the broth. while that is cooking chop up your vegetables and add to the soup. You can either set the soup to boil in stock pot on the  stove or cook on put on low in a crock pot and let cook during the day. When the soup is almost ready take the flour water and salt and mix into a ball. flatten the ball and cut it into strips. When the soup is five minutes from being done add the strips and stir.
